Adraki Gobi( cauliflower cooked with ginger)


Ingredients:

1 cauliflower

2 potatoes peeled and sliced vertically

1 teaspoon cumin seeds

1/2 teaspoon fenugreek seeds

1" ginger grated

2 sliced green chillies

salt according to taste

1 teaspoon turmeric powder

1 teaspoon coriander powder

1/2 teaspoon red chilli powder

pinch of asafetida

1 teaspoon roasted cumin powder

1 teaspoon amchur(dry mango powder)

1 tablespoon kasoori methi

4 tablespoons mustard oil

chop the caluflower into florets and soak in warm water with salt for 15-20minutes and then drain the water. Slice the potatoes vertically.

In a nonstick wok, add oil and let it warm up . Add cumin and fenugreek seeds then the grrated ginger and green chillies. Stir it well add salt and all the dry spices. Toss it well add the cauliflower and potatoes stir it well. Cover it for 8-10 minutes. Keep checking and make sure the potatoes are cooked. On top add roasted cumin powder and amchur. Garnish with kasoori methi( dry fenugreek leaves). Serve with Chapati.
