Andhra Egg Masala

Boiled egg cooked in spices,coconut cream and curry leaves.


Ingredients:

8 full boiled eggs- you can use as per your needs. Slice them in half.

Masala-

1-2 red onion depending onthe quantity for 8 eggs 2 medium sized onions ,for 4-6 eggs 1 medium sized.

tomatoes 4-6. plus 1 tablespoon tomato paste

1 tablespoon ginger garlic paste

3-4 green chillies

salt according to taste

1/2-3/4th teaspoon coriander powder

1/2 teaspoon garam masala

1/4th teaspoon turmeric powder

1/2 -1 teaspoon red chilli powder depends on the spice level you want

1/2 cup coconut cream

curry leaves.

1 cinnamon stick

1 black cardamon

2-3 cloves

In a nonstick wok or pan add oil-add dry spices like the cinnamon, cloves and cardamon and then add onions with a little salt. Let it get golden brown then give it a stir add green chillies and curry leaves. Now put this in a grinder till it is smooth. In the same pan add tomatoes and tomato paste cook till it is soft and well blended add ginger garlic paste and the rest of the spices. Add this to the grinder as well. Once the mixture is all amooth pour it into the same pan you cooked the onions and add the coconut cream . Add the sliced eggs face down first for 3-4 minutes then flip it gently. Add 3/4th cup water and cover it with the lid. Cook for 5-7 minutes. Garnish with cilantro and serve with steamed rice or roti.
