Arugula pear salad

Unbelievably delicious vegan salad with pears , spices candied pecans , pomegranate seeds dressed with balsamic vinegar


Ingredients:

A bowl of arugula leaves washed and toss a few teaspoons of olive oil

salt & pepper to taste

1 tablespoon balsamic vinegar

2 pears sliced and poached

1/4 th cup pomegranate seeds

1 avocado optional

2 tablespoons candied spiced pecans

Boil I cup water with 2 tablespoons sugar. Once it’s boiled for 5-7 minutes add the sliced pear and cover with wax paper and make a hole in the center leave it in there for 5 minutes take the pears and place it on the leaves.

Now preheat oven at 350F and place the pecans in there drizzle 1teaspoon honey

Prepare dressing -

1 tablespoon balsamic vinegar

some cayenne pepper

and 1/4 teaspoon Dijon mustard

toss the leaves and place the pears on top add pecans and drizzle the dressing
