Chicken Piccata with lemon caper sauce.

Chicken breasts cooked with lemon capers and vegetables of your choice..I did mine with Asparagus.



Ingredients:

4 Chicken breast fillets -pounded to flatten it.

4 tablespoons of all purpose flour

1 cup chicken broth

3 pods of smashed garlic

Salt to taste , 1/4th teaspoon pepper and 1/4th teaspoon lemon pepper

3 tablespoons lemon capers

Olive oil and butter

parsley to garnish

Marinade the chicken breasts with salt, pepper anf flour -leave it aside for 30 minmutes. In a skillet add 3 tablespoons of olive oil and shallow fry till cooked from both sides properly.

Prepare the sauce- in a saucepan add butter , garlic and then add the capers then slowly add the broth simmer it and pour this on top of the chicken reduce the heat. Now add 1/3 rd cup lemon sauce and some heavy cream to thicken the sauce. Put this in an oven safe dis. Preheat oven at 350 F , add asparagus to the same skillet where chicken was cooked and toss it well and add it now to the oven dish for 22-25 minutes. Serve with salad or pasta.
