Couscous salad

A meditterranean salad tossed with cherry tomatoes, cucumbers, onions,chick peas mint drizzled with lime juice and olive oil.


Ingredients:

1 cup couscous

1 plus 1/4th cup water

salt

1 tablespoon olive oil

Veggies-

1 chopped english cucumber

1/2 chopped red onions

1 cup cherry tomatoes

1/2 cup chickpeas or garbanzo beans

1/2 teaspoon basil

Dressing:

2 tablespoons olive oil

2 tablespoons lemon juice

salt according to taste

1/2 teaspoon oregano leaves

1/4th teaspoon red chilli powder

1/2 teaspoon mint leaves on top to garnish

Boil the water with oil and salt, once water is boiling add the couscous and turn the gas off and cover the pan for 5 -6 minutes. Let the couscous soak well and stir it well. Let it cool and add the veggies and the dressing on top.
