Dosa with your choice of filling. Anda ( Egg Dosa)

For Dosa -I used instantpot to make the batter.

4 cups Idli rice

1 cup Black gram Lentils-Urad dal whole or split.

Salt -2 teaspoon

1 teaspoon fenugreek seeds

Now soak the dal and add fenugreek seeds and soak rice for 4-5 hours. Then put the soaked dal into a i wet grinder or food processor to make the smooth paste. add 1/2-1 cup of ice to smoothen it.

Now put the mix in the instant pot and in the same grinder now put the soaked rice and grind into smooth paste and add salt. The batter should be smooth and free flowing.

Now in the instant pot put the batter on yogurt mode for 10-12 hours with the glass lid not the instant pot lid. after 12 hours your batter is ready to make your dosas.

In a cast iron pan let it warm up add a little bit of oil spread the dosa batter like a crepe and then pour the egg on it.

Eggs- beat some eggs and add your favorite veggies in it and spread it on the dosa batter. flip it and roll it up like a crepe.
