Cherry Tomatoes
Japanese sweet potatoes
chinese eggplant
Purple/red cabbage
Avocado
Arugula greens or spinach
Vegan dressing
cashew yogurt 3 tablespoons
1 tablespoon chopped mint
1 tablespoon olive oil
salt to taste
1/2 teaspoon honey
1 teaspoon black & red pepper
drizzle sriracha on top
Non Vegan dressing
3 tablespoons greek yogurt
and rest is the same
Roast the potatoes and eggplant for 25 minutes with a little bit of oil at 400 F.
