Fall Vegan Winter Salad

Arugula tossed with fruits and a light dressing :


Ingredients:

Arugula salad

1 Persimmon

1- Pear

1/2 pomegranate seeds

handful spiced pecans

3-4 pitted dates

sprinkLe pumpkin seeds on top

Dressing

1 tablespoon honey

1 tablespoon olive oil

salt plus pepper according to taste

1 teaspoon mustard

1/4 th teaspoon tajin seasoning or cayenne powder
