Green curry paste

Thai green curry paste

1 chopped shallot

4 cloves of garlic

1 tablespoon galangal

2 lemongrass sticks chopped

5 chopped green thai chillies

1/2 cup cilantro with the stems

1/2 cup thai basil

1 teaspoonkafir lime leaves

1 tablespoon coase salt

1 tablespoon vineagar

2 tablespoons water

1 teaspoon coriander seeds

1 teaspoon cumin seeds

1 teaspoon white peppercorn

In a small pan roast coriander seds, cumin seeds wand pepper corn. Let it cool and put these in a mortar and pestle and make it into a coarse powder. Now in a food processor or spice grinder add all the ingredients and these dried spices till it becomes a smooth paste.
