Green Papaya salad

A thai speciality salad.

Ingredients:

shredded green papaya and deseeded

Lettuce

4-5 grape or plum tomatoes

1/4th cup shredded carrots

1/2 shredded cucumber

some sliced long green beans

1 tablespoon peanuts

2 cloves of garlic

2 thai chillies sliced without the seeds

1/2 -3/4th teaspoon salt

1/4th teaspoon chili powder


Dressing:

3 tablespoons lime juice

1/2 teaspoon brown sugar

1 teaspoon fish sauce-optional

Garnish- chopped cilantro and 1 teaspoon roasted peanuts.

In a food processor- add the garlic , 1 tablepoon dry roasted peanuts, green chillies , sugar, salt, chilli , lime juice all together.

In a bowl place the Lettuce in the bottom - add the shredded papya, cucumber, carrots, beans and tomatoes togther and toss this paste and add 1 tablespoon rice vinegar to it.
