Ingredients for the base paste:
1. 3 lemon grass sticks chopped.
2.4 Thai red chillies
3. kaffir lime leaves
4. 1 teaspoon grated ginger
5.5-6 cloves of garlic
6. bunch of basil leaves
7. 4 shallots
8. 3 tablespoons of coconut milk
Marinate ingredients: 1. 3 tablespoons oyster sauces 2. 1/2 cup ginger juice 3. 4 tablespoons lime juice and 2 tablespoons soy sauce 4. Salt and 1/2 teaspoon chilli paste Preparation: Chicken: boneless skinless-1 1/2 pounds Marinate the chicken for an hour. Now grind the base paste into a smooth paste and fry it in the pan with 1 1/2 tablespoons of oil. Once oil is visible on the top add the chicken and cover the pan. Now add 2 tablespoons of coconut milk and 1/2 cup of water.Check the taste you may need to add more salt and red chili powder according to your taste. Add lime juice on top and garnish with some basil leaves. Serve with steam rice.
