Kukupaka- East African dish

This dish can be cooked with chicken or corn both Vegetarian and Non Vegetarian Option

Vegetarian with Corn


2-3 corns cut into half.

3-4 cloves

1 cinnamon stick

1 can lite thai coconut milk

salt to taste

grated ginger 1 teaspoon

1/4th cup cilantro and 2-3 green chillies - grind them together

pinch of turmeric

2 tablespoons lemon juice

1/2 teaspoon red chilli powder

Boil the corn with 1 teaspoon salt for 10-12 minutes till tender

Now in a saucepan add 2 tablespoons of oil and add cloves and cinnamon till you can smell and add the cilantro and green chillies paste and ginger. Add salt 1 teaspoon salt or according to taste, then the red chilli powder and pinch of turmeric and give it a stir. Add the coconut milk let it boil and then take the corn out and leave the boiled water as is, and put the corn in the pan with the mixture and keep adding the boiled water depending on the consistency you want. Enjoy with the steamed rice.

For the chicken, - same prep but now saute the chicken thigh boneless and skinless- 1lb with the cilantro +green chillies and ginger paste till its golden brown and then add the rest of the spices and coconut milkplus the boiled water.
