Paneer toast

Paneer- soft cnheese made by curdling milk- saute the cheese with onion, tomatoes, ginger and fenugreek leaves and cook it with dry spices.

Ingredients:

1 cup grated or crumbled cheese-paneer

1 small onion -chopped finely

1 medium sized cluster tomato grated

1/2 teaspoon grated ginger

salt to taste

1/4th teaspoon coriander powder

1/4th teaspoon red chilli powder

1/4th cup chopped fenugreek leaves.

In a non stick pan saute onions with 2 tablespoons of vegetable oil, once onions gets translucent add the ginger cook till goldden brown, add tomatoes and ll the dried spices stir for 5 minutes then add the fenugreek leaves and stir for anpther 4-5 minutes and at last add the cheese/paneer. Tuen the heat off. Place the slices of break on a baking sheet with some non stick oil spray and add the cheese/ paneer on the bread and bake in the oven for 10-12 minutes on 350 F. Serve with your favorite salad or soup.
