Penne Arrabbiatta

Angry tomato sauce penne pasta cooked with vegetables.

Ingredients:

1 28 oz peeled tomatoes( san marzano)

1 box penne pasta

2 tablespoons tomato paste

salt according to taste

1 teaspoon crushed red pepper

10-12 sliced basil leaves

4 cloves of garlic

3 tablespoons olive oil

1 shallot

1 small eggplant

parsley

1/4th cup grated parmesan cheese

Preheat oven at 400F and place the eggplant wrapped in the foil with salt and oil for 35 minutes.

Peel it and chop it. Now boil the penne pasta with salt and 1 tablespoon olive oil. In a pan, add the oil and sliced shallots with salt and then minced garlic . Once it becomes olden add the can of peeled tomatoes , paste and crushed red pepper then add the eggplant and cook it for 8-10 minutes. Then after add the cooked pasta to this sauce. Serve ith adding the grated cheese o top and top with parsley.
