Ingredients: Protein 2 lbs bonless skinless thigh pieces or 1 cup firm Tofu
2 cans coconut milk
1 cup chicken broth for chicken or 1 cup Vegetarian broth
Salt according to taste
1/2 chopped basil leaves
4-5 tablspoons of the fresh red curry paste according to spice level
1 green bell pepper
1 red bell pepper
1 can bamboo shoot
1/2 cup broccoli
1/2 cup carrots
1/2 cup mushrooms
In a wok or pan add 1/2 cup coconut milk bring it to boil add red curry paste and then add your protein and cook it then add the veggies, salt and coconut milk and the broth till it reduces add thai basil and if you want more spicy add 1 more teaspoon red curry paste to this curry. Serve with steamed brown or white rice.
