Roasted Eggplant -Baigan Bhartha

Roasted eggplant cooked in north indian style with onions tomatoes , ginger and green chillies


Ingredients: 2 eggplants

1 medium finely chopped onions

2 chopped tomatoes

2 chopped green chillies plus 1 teaspoon grated ginger

1 tablespoon chopped cilantro to garnish

3 tablespoons ghee

1 teaspoon cumin coriander powder

salt according to taste

1/2 teaspoon garam masala

1/2-3/4th teaspoon red chilli powder

pinch of turmeric

1/2 cup frozen peas

In the oven preheat on roast mode at 400 F put the eggplant on baking sheet for 40 minutes

peel the skin and mash it.

In a wok , add the ghee let it warm up then add the onions wait till it's golden brown then ad the ginger and green chillies and let it cook for 4-5 minutes till its golden brown and at last add the tomatoes cook for 5 minutes with salt and the spices , then add the green peas and the mashed eggplant for 3-4 minutes. Cover it for 5 minutes and garnish with cilantro. Serve it with hot chapatis.
