Simmer to Slimmer with this authentic Curd Rice.

Curd rice an authentic delicacy from South part of India. Tempered with spices and curry leaves and nuts. Mixture of cooked white rice then soaked in yogurt and spices.


1 cup basmati rice

2 1/4 water

3/4th cup yogurt

salt according to taste

asafetida

3-4 green chillies

curry leaves

ghee

Cashew and mustard seeds for tempering


Boil the rice . Let it cool to room temerature and add the yogurt with salt.

Tempering

2 tablespoons ghee

add mustard seeds and a pinch of asafetida

2 whole red chillies curry leaves green chillies and some cashews on top to garnish.
