Snake Gourd Stir Fry ( Tori sabzi)

Snake gourd also called Tori ki Sabzi in Hindi. A light vegetable dish cooked with spices and best served with chapati or plain rice. Very light on the stomach!


Ingredients: 3-4 medium sized snake gourd -peeled and cut

1 small red onion chopped finely

1 teaspoon grated ginger

2 chopped green chillies

2 small red tomatoes chopped or grated

1 teaspoon cumin seeds

1 teaspoon coriander powder

1/2 teaspoon turmeric (haldi) powder

1/2 teaspoon red chilli powder

salt according to taste

2 tablespoons vegetable or avocado oil

cilantro to garnish

Method: In a wok or pan add oil let it warm up and then add cumin seeds. Once it starts crackling add the onion and ginger with green chillies , then add salt and once it is light brown add the tomatoes stir it well and then add the tomatoes and dry spices. Let it cook for 4-5 minutes then add the chopped snake gourd and toss it for a few minutes. Then cover it on low temp for 5 minutes.

. Turn the stove off and add cilantro on top. Serve with hot chapati or Rice.
