Snakegourd- Tori ki sabzi

Snakegourd is in the same family of Zucchini- sauted with onions, ginger and spicec.

Ingredients: Peel and chop the snakegourd oe leave th skin on as you wish.

1 chopped medium sized onion

3 tablespoons of vegetable oil

1 teaspoon cumin seeds

1/2 teaspoon fennel seeds

1/4th teaspoon mustard seeds

salt according to taste

1/2 teaspoon red chilli powder

1/2 teaspoon turmeric powder

1/2 teaspoon coriander powder

2 green chillies chopped

1 teaspoon ginger

pinch of asafetida.

In a non stick pan add oil let it warm up and then add the cumin, fennel and mustard seeds. After you hear the crackling add chopped onion, green chillies and ginger. Give it a nice stir. Add the asafetida, salt and dry spices. Once it is all blended and cooked well add the chopped snakegourd. Cover the lid for 5-7 minutes. Uncover it and stir it well. Garnish with cilantro. Used as a side dish, Serve with chapati .
