Spicy corn salad

Corn salad with veggies tossed with spicy dressing

Ingredients:

1/4th cup corn

1 cup chopped lettuce

1 -2 diced persian cucumber

1/2 cup grape tomatoes

1/2 sliced onion

1 chopped avocado

Nuts-optional

Dressing-1/4th cup lemon juice

1 tablespoon olive oil

salt according to taste

1/2 teaspoon red chilli powder

1/2 teaspoon sugar

1 tablespoon buffalo sauce

2 tablespoons of nonfat greek yogurt

In a pan add oil and saute the corn with a pinch of salt

In a blender add the buffalo sauce with greek yogurt and add the salt and spices and sugar

Now in a bowl add the chopped lettuce, cucumber, avocado and chopped grape tomatoes and sliced onions. Now on the chopped veggies add the lemon juice and then add nuts on top if you want and top it with the dressing on top.
