Thai Green curry Chicken

Homemade green curry chicken with vegetables.

Ingredients

6 tablespoons green curry paste

1 1/2 cans of coconut milk

2 lbs boneless skinless chicken thighs

1small chopped green pepper

1/2 red bell pepper

1/2 cup baby corn

1/2 cup green beans

1/4th cup broccoli

1/4th cup carrots

1 stick lemon grass

some sprigs of thai basil leaves

salt to taste

1/2 teaspoon red chilli powder

1 tablespoon fish sauce

Homemade green curry paste -In a wok add 2 tablespoons oil and add 6 tablespoons of green curry paste and roast for a few minutes, stir it and put this on one side and on the other side saute te vegetables and then add the chicken mix it well . Now add the salt and the coconut milk stir well. Check the salt and spices according to taste. Add the lemongrass and basil and serve with steam rice.
