Tomato Basil Soup

Fresh tomatoes- roma, cluster, cherry tomatoes blended with spices, butter and basil.


Ingredients:

Tomatoes- 4-5 roma tomatoes, 2 cluster organic tomatoes,5-6 cherry tomatoes

2 cloves of garlic

salt to taste

1 teaspoon ground black pepper

pinch of sugar

1/4th teaspoon red chilli powder

1 tablespoon butter plus 1 teaspoon olive oil

5-6 basil leaves chopped

1/2cup heavy cream optional.

Boil the tomatoes with salt till completely soft and skin separated then strain and make sure seeds are separated. Now in a pan add oil and butter with minced garlic . Once a bit golden add the strained tomatoes and 3 cups of water keep boiling . Add red chili powder, pepper pinch of sugar and heavy cream to thicken it. Garnish with chopped basil.
