Tortilla soup chicken and vegetarian

Ingredients: 1 small diced onion

1 tablespoon oil

1 teaspoon minced garlic

1 teaspoon cumin powder

1 teaspoon taco seasoning

1 teaspoon red chili powder

Salt according to taste

1 quart chicken stock

1 can black beans

1 can fire roasted diced tomatoes 🍅

1 cup corn

2 tablespoons shredded pepper jack or jalapeño cheese

Garnish with cilantro, jalapeños. 1 tablespoon lime sour cream chopped avocado

Handful of Tortilla strips


In instant pot - add oil and put it on sauté mode add onions let it become golden brown add the garlic and salt mix well now add the diced tomatoes and rest of the seasonings. Then add the black beans mix well add boneless skinless chicken thigh pieces and the chicken stock. Now put the sauté mode off and close the lid make sure it's sealed and then put the pressure cook for 3 minutes. Once it's done make sure to turn the vent mode to left side to let the steam out and mix well. Add the cheese and make sure chicken is shredded too now put it on slow cook till ready to serve. Garnish with cilantro lime jalapeño avocado and sour cream top it with tortilla strips.


Veg tortilla soup


Same Ingredient but no chicken stock instead veg stock and add bell pepper and more corn. Also pressure cook for only 2 minutes.
