Upma- An authentic South Indian breakfast-can be made vegan ig we don't use ghee

Roasted Semolina with vegetables and tempered with various seeds, curry leaves and spices.


Ingredients: 1 cup semolina

2 1/2 cups of water

2 tablespoons of oil or ghee

1/2th cup cup green peas and carrots

1/2 onion preferably red-finely chopped

curry leaves

1/2 teaspoon minced ginger

green chillies chopped 1-2

salt according to taste

1/2 teaspoon urad dal

1 teaspoon mustard seeds

1/4th teaspoon turmeric powder

1/4th-1/2 teaspoon red chilli powder

pinch of asafetida

pinch of sugar optional

In a pan dry roast the semolina on medium heat for 3-4 minutes.

Put it in a bowl and in the same pan add ghee or oil and add the mustard seeds after you hear the crackling add the urad dal and ginger , green chillies and so,e asafetida stir it for a few minutes add the onions and curry leaves. Once onions are golden brown add the peas and carrots and rest of the spices and salt. For some extra protein you can add cashew or peanuts too.Now add the water let it boil and add the roasted semolina, bring the heat to simmer and cover for 4-5 minutes. Serve it with a hot cup of coffee.
